Tortellini Soup

Tortellini Soup
Serves 10-12

3 -Tablespoons fresh basil, chopped (dried can be used also)
2 -cloves garlic, minced
2 -Tablespoons olive oil
3-32 oz. boxes chicken broth
1- 20 oz. package of cheese or beef tortellini
1- 12 oz. can diced tomato's
1/2 cup carrots, sliced
1 1/2 cup of frozen peas
salt and pepper to taste


Directions:
In large pot, add olive oil and saute garlic and basil. Add chicken broth, diced tomato's, and carrots and peas. Cook on medium to low heat until carrots get tender, then simmer. Add tortellini about 15 minutes before serving.
Sprinkle grated Parmesan cheese on top of each bowl and serve with bread.
